Could care less means that it would be possible for you to care less, which means you do care some.

LOL It's funny because I have a pet peeve about that too but whenever I say it out loud it comes out more like "could", I think because I've gotten used to hearing people say it that way and it's in my brain... or because I'm lazy and "couldn't" is like .1% harder to say. Hah
