Easter almost always means a chance to spend time with family, and unlike
Christmas that usually involves working on the Public Holiday, Easter is the
one time work will never interfere with enjoying a tradition of Cassava Pie!



This is a traditional Xmas/Easter dish from Bermuda that dates back to 1612

I like Christmas a lot. Because I see a lot of people, it snows, your off of school, finals come up, getting to the end of the year, etc. I just like it so much.

Christmas is great, I like the winter, it doesn't snow in my area, but it rains [+++], I like looking at old people in the xmas sweaters, and just the environment that is christmas.  :D

Christmas, my Grandfather died on Christmas Eve but it was always his favorite. He loved to cook a big dinner and watch the grandchildren open all of the gifts (I have 30 first cousins) and then he and my Grandmother would hand out cards to us on top of all our gifts with money and then each family would give them gifts to open in front of the fireplace. Some people might be  sad to celebrate after what happened, but it was his favorite and it still feels like he's there with us every christmas eve.

I just happen to have been one of the two people who voted for Thanxgiving, though I haven't yet discussed my decision in the thread.  I like the canned cranberry sauce (jellied, not whole-berry), and punkin pie. And I love it when Granny puts too damn much sage in the dressing! :D

Casava Pie (Davis Family)

2 kg Cassava
250 gm Butter
3/4 tbsp Salt
3/4 Cup Sugar
9 Eggs
1tsp Worchester Sauce
1tsp Apple Cider Vinegar
1tsp Lemon Juice

750g Pork cooked, boned and ready
1Kg Chicken, cooked, boned and ready


Mix all ingredients well.  Put into baking pans leaving a breathing
hole in the middle of top layer. Use 2 bread pans plus any extra
pan, bowl, etc to fit remaining mixture.
Cook for approx. 90 minutes at 150°C, then 45 minutes at 120°C

My Pleasure! But for the Worchester Sauce, A-Cider Vinegar & Lemon Juice,
this recipe has been handed down through generartions of my father's side
of the family. I figured anything that could help tenderise the chicken & pork
in the pre-cooking, would improve the flavour and texture of the end result!

The best part of this dish is continuing a family tradition. With an impending
move to Victoria, I just have to work out where I'm going to find Cassava...
most likely in an Asian grocer in Melbourne. Its a challenge I look forward to
