It IS said Erb!  It's called a capitonym!

capitonym (KAP-i-toh-NIM) noun

A word that changes pronunciation and meaning when it is capitalized.

   As in the following poems:

      Job's Job
   In August, an august patriarch
Was reading an ad in Reading, Mass.
   Long-suffering Job secured a job
To polish piles of Polish brass.

      Herb's Herbs
An herb store owner, name of Herb,
Moved to a rainier Mount Rainier.
It would have been so nice in Nice,
   And even tangier in Tangier.

the one who never sleeps

But both words are capitalized in the headings.  So if it is not a capitonym in all cases, is it a capitonym?  Or is it just an exception?

Well it's a heading!  Duh!  If I had a sentance with the first word as herb it would be uppercase as well.  Or else it would be wrooooonggggg!

This is what m-w.com has to say

Main Entry: herb
Pronunciation: '&rb, US also and British usually 'h&rb
Function: noun

So huh . . .US and British, we're the only ones who mispronounce it.  But not me.

So whenever you capitalize it it should change meaning and pronunciation

Sorry, yes I know it is a exception, I'm just yanking your chain.

--rosie....I used to say H-E-R-B all the time just like you do but I think there is two different ways I guess.  Since you guys started the language you are correct :D

The beauty and the problem with the English language is that there are a TON of "rules" for pronunciation and spelling that aren't actually rules.  We beak them a lot.

It's mostly because English STEALS from every other language as often as possible.  Which is what makes it so great and what also makes it so hard to learn.

I mean, come on.  pronounce Decade.  now pronounce facade.  confused yet?  fusion.  cusion.  riiiiiight.

BTW, I think the rule about words changing pronounciation depending on being CAPITAL letters is actually dependant on them being PROPER nouns.  When it's a proper noun it changes pronunciation.

And "erb" is an accepted ENGLISH pronunciation of the word.  Just like "ant" is a proper way to say "aunt" (even through I prefer aunt) and "skedule" is a fine way to say "shed-jule" or "leesure" vs "lessure".  Both are right in both English and American dictionaries.

Hmmmm all my exaples did follow that pattern, but if you look at the word it's not propernounym, it's capitonym . . . *shruggs*
