Missy Higgins and Bic Runga are 2 of the best.  I've been a huge fan of Missy's for a few years and have been patiently waiting for her album.

I'd recommend "the special two" and "all for believing" which you can get from iTunes (along w/ her whole EP).

Amy Vee (not to get confused with Amy Lee) is an unsigned Australian singer/song writer.
I first heard her song Where you are on my local radio station NOVA.
Her voice is so sweet and if you go to her website you can hear 1 minute samples of about 3 of her songs I think.
She is a talented writer as you will get to hear but I just dont know why no stinking record label hasnt nabbed her up yet :)
Hopefully some big shot would have been listening to her on Nova aswell.

I found some pictures and an interview on Missy.
Here is the coca cola interview

Tim Cashmere: You have a bunch of cool instruments on your debut E.P., do you envisage these when you're writing a song?

Missy Higgins: No. Not at all. It all gets decided in the production process. When I wrote the song, I never really… well it depends on the song really… but most of the songs were written a while ago when I never even imagined playing in a band really. It was just me and a piano, or a guitar as 'Greed for Your Love' is. Yeah, it was just a bit of an experiment in the studio. I like unusual instruments. I don't like the standard bass, drums and guitar or piano sound.

TC: Are you one of those people who can just pick up an instrument and be a whiz in five minutes?

MH: No. I wish I could say that!

TC: Don't we all! Anyway, at the age of twenty you've already been around America, Europe (albeit unrelated to music) and East Timor. How did you get chosen for the last one?

MH: Well, Triple J was organizing it through the whole Unearthed thing. That was amazing.

TC: What is a military audience like to play to?

MH: Well it was military, but some of the time the East Timorese people would come in and watch. A military audience is kind of weird. Pretty much how you would imagine a troop of males that haven't seen a female in a long time and have been stuck in a base camp in the middle of nowhere for too long without any alcohol. It was a bit like that, but they were really funny great guys and they never have things like this, like a show. It was with Killing Heidi and they all loved them and Paul Dempsey from Something for Kate and Groove Terminator, so some of them found it a bit hard to settle down a listen to a quiet piano solo set from a female singer.

TC: They didn't throw you in the middle of all the harder acts did they?

MH: No, I usually went first. No, GT went first.

TC: How many shows did you do?

MH: I don't know. I was over a couple of weeks, maybe thirteen shows or something. We just went to all the base camps. There was a whole lot of them. It was so fucking hot as well and we had to wear a uniform, like a khaki thick hard yakka pants and long sleeve top. You weren't allowed to show any skin because of… the mosquitoes or something, because of malaria and because you weren't allowed to turn the guys on or anything like that! You had to be very asexual. God it was so hot! Some of them, like there was this one show at a stadium that had 6,000 people and all the troops and generals and everything were sitting on the stairs and on the grass with the East Timorese kids and it started pouring down with rain, but they all stayed because they'd never seen anything like it before!

TC: I imagine that was quite a contrast to America…

MH: Yes. Well, I've never toured in America, but I've been back and forth there because of the record company over there.

TC: Who runs your website? www.missyhiggins.com?

MH: Um… His name is… Duane someone?

TC: Poor Duane is probably trying to hold in the tears because you don't remember his name!

MH: I know! I've only met him once! Otherwise it's just been corresponding through e-mail. That's really bad though! It's probably not even Duane, it's probably something else.

TC: Duane is a cool name though.

MH: Really? I wish I had a flower name, like Rosie or Violet or Daisy. It's so cute! I'm going to call my kids all flower names!

TC: You could do it the American way and name your kids after qualities that you hope they will grow up to have, like Faith and Hope.

MH: [Laughs] Yeah right. American culture is so different to Australian. It's so bizarre going from here to there all the time.

TC: Do you think your music will integrate well over there?

MH: I actually don't have a clue. They keep telling me how different the American market is to the Australian market and I'm beginning to realise how different it is. You really have to fit into a radio category because they're so defined all the radio stations that it seems really difficult to break in. The latest Silverchair record they found really hard to accept and that was such a brilliant album I thought! But I don't know, I don't really care. I'd much rather be successful over here than in America.

TC: …and you're taking the first step to that by touring with George. A tour which you're midway through I believe?

MH: Yeah I've done about five shows.

TC: You've been back [from America] for five days and you've already done five shows. That's a good effort!

MH: Yeah, I've done a show every night since I've been back. It's been fun. We've had amazing audiences, they've just been stone quiet. I thought they Waifs audience were quiet, but these are really well behaved!

TC: Is that good or bad?

MH: It's really good as long as they're responsive at the end when you finish, they can be as quiet as they want. It's great when they're quiet because my music is so quiet that if people talk then it really gets lost.

TC: You could get a bigger P.A.

MH: Yeah, well that's loud, but when people start talking over my music then no one really around them can hear. It's not a huge band sound, but it's been really cool. It's been great.

And the biggest shock of the day is MISSY HIGGINS IS NUMBER 1!!!!
This is so unexpected, her song Scar is number one on the Aria chart.
How cool is that, I had an Alf Stuart saying in my head when I saw- "Stone the flamin' crows" LOL
